Gluten-free monster cookies are a delightful treat that combines the chewy goodness of oats with the fun mix-ins of chocolate chips, M&M's, and sometimes nuts or peanut butter. These cookies are perfect for those looking to satisfy their sweet tooth while adhering to a gluten-free diet 

Ingredients:

– 1/2 cup (1 stick) unsalted butter, softened – 1 1/2 cups creamy peanut butter (ensure gluten-free) – 1 cup brown sugar – 1 cup granulated sugar – 3 large egg – 1 tablespoon vanilla extract – 4 1/2 cups gluten-free quick oat – 2 teaspoons baking soda – 1 cup semi-sweet chocolate chips (ensure      gluten-free) – 1 cup M&M's (ensure gluten-free, some brands      offer gluten-free options) – Optional: 1/2 cup chopped nuts (like walnuts or      pecans, ensure gluten-free)

Instructions:

 Preheat Oven and Prepare Baking Sheets:

– Preheat your oven to 350°F (175°C). Line baking       sheets with parchment paper or silicone baking mats.

 Cream Butter and Sugars:

– In a large bowl, cream together the butter, peanut       butter, brown sugar, and granulated sugar until smooth and well combined.

 Add Eggs and Vanilla:

– Beat in the eggs, one at a time, then stir in the       vanilla extract.

Combine Dry Ingredients:

– In a separate bowl, mix the gluten-free quick oats       and baking soda. Gradually add to the creamed mixture and mix well.

 Add Mix-Ins:

– Fold in the chocolate chips, M&M's, and       optional nuts until evenly distributed.

 Form Cookies:

– Drop by rounded tablespoonfuls onto the prepared       baking sheets. Flatten slightly with the back of a spoon or your hand, as       they won't spread much during baking.

 Bake:

– Bake for 10-12 minutes in the preheated oven, or       until the edges are lightly browned. The center might seem soft but will       firm up as they cool.

Cool:

– Allow the cookies to cool on the baking sheets for       about 5 minutes before transferring them to wire racks to cool       completely.
