Creating a gluten-free Maple Pecan Trail Mix Granola is a delightful way to enjoy a nutritious, energy-packed snack that's perfect for on-the-go activities or a hearty breakfast. This recipe combines the natural sweetness of maple syrup with the rich, nutty flavor of pecans, along with a variety of seeds and gluten-free oats for a crunchy, satisfying granola.  


– 3 cups gluten-free rolled oat – 1 cup pecans, roughly chopped – 1/2 cup raw pumpkin seeds (pepitas) – 1/2 cup raw sunflower seed – 1/4 cup sesame seed – 1/4 cup flaxseed meal (ground flaxseeds) – 1 teaspoon cinnamon – 1/2 teaspoon salt – 1/3 cup coconut oil, melted – 1/2 cup pure maple syrup – 1 teaspoon vanilla extract – Optional add-ins: 1/2 cup dried fruit (such as      cranberries or raisins), chocolate chips, or coconut flakes (add these      after baking)


Preheat the Oven:

– Preheat your oven to 300°F (150°C). Line a large       baking sheet with parchment paper.

– In a large bowl, combine the gluten-free rolled       oats, chopped pecans, pumpkin seeds, sunflower seeds, sesame seeds,       flaxseed meal, cinnamon, and salt. Mix well to ensure everything is       evenly distributed.

Mix Dry Ingredients:

– In a small bowl, whisk together the melted coconut       oil, maple syrup, and vanilla extract.

Combine Wet Ingredients:

– Pour the wet ingredients over the dry ingredients       and stir until the dry ingredients are well coated.

 Combine Wet and Dry Mixtures:

– Spread the granola mixture in an even layer on the       prepared baking sheet.

Spread Granola:

– Bake in the preheated oven for 25-30 minutes, or       until the granola is golden brown and fragrant. Stir the granola gently       halfway through baking to ensure even cooking.


– Remove the granola from the oven and let it cool       completely on the baking sheet. The granola will further crisp up as it       cools.


– Once cooled, you can add any optional ingredients       like dried fruit, chocolate chips, or coconut flakes.

 Add Optional Ingredients:

– Transfer the cooled granola to an airtight       container. It can be stored at room temperature for up to 2 weeks.
