Sun-dried Tomato Parmesan Chicken is a flavourful and easy-to-make dish that combines the rich taste of sun-dried tomatoes with the savory flavor of Parmesan cheese, creating a delicious meal that's perfect for weeknights or special occasions.

– 4 boneless, skinless chicken breast – Salt and pepper, to taste – 1 tablespoon olive oil – 2 teaspoons minced garlic – 1/2 cup sun-dried tomatoes, drained and chopped – 1 cup chicken broth – 1 cup heavy cream – 1/2 cup grated Parmesan cheese – 1 teaspoon Italian seasoning – 1/2 teaspoon red pepper flakes (optional for heat) – Fresh basil leaves for garnish


 Prepare Chicken:

– Season chicken breasts with salt and pepper on both       sides.

 Cook Chicken:

– In a large skillet, heat olive oil over medium-high       heat. – Add chicken breasts and cook until golden brown on       both sides and cooked through, about 6-8 minutes per side. Remove chicken       from skillet and set aside.

 Make the Sauce:

– Add sun-dried tomatoes and sauté for another 1-2       minutes. – Pour in chicken broth to deglaze the pan, scraping       up any browned bits from the bottom of the skillet. – Stir in heavy cream, Parmesan cheese, Italian       seasoning, and red pepper flakes. Bring to a simmer and allow the sauce       to thicken slightly, about 3-5 minutes.


– Return the chicken breasts to the skillet, spooning       the sauce over them. Cook for another 2-3 minutes, until the chicken is       heated through and the sauce has thickened to your liking.


– Garnish with fresh basil leaves before serving.
